Déguste is a rhythm. A crew. A street-level family.

We create food that says something — about where we’ve been, who we are, and who we want to feed. This is our way of sharing love. Of building moments that taste like something real. A bit of chaos, a lot of heart, and flavor you don’t forget.

ABOUT  DÉGUSTE

All started from me, Pierre.

From Michelin kitchens to street joints, Wine bars to Cocktail places from New York to Marseille, London to Porto. I’ve worked every corner of the food world.

Dishwasher. Sommelier. Mixologist. Cook. General manager. And now, I’m all of them at once.

At Déguste, I do everything myself — from prep to service, from sauce to cleanup.Every sandwich, every playlist, every smile handed over the counter carries my energy.

But I’m not alone. This project is mine, but it’s built with love from the people around me.

My lovely supportive girlfriend Manou designs the menus, draws the mascot, and builds the playlists that set the mood.

My friend and chef Hugo Paillon helped bring depth to the recipes and elevate every flavor.

Salomé Roussel crafted the visual identity that gives Déguste its look.

Rafael Pereira captures it all — the food, the energy, the soul — through his lens.

And Dogma Wine Bar believed in the project from the start, welcoming Déguste into their space and letting the vibe grow.

Déguste is personal.

It’s the sum of what I’ve lived, and the people who inspire me. It’s food made by hand, fueled by passion, and shared with everyone who steps up to the counter.
